Buttered Shrimp

Buttered Shrimp in lemongrass

Buttered shrimp with lemongrass is a delightful and flavorful dish that combines the richness of butter, the freshness of lemongrass, and the succulence of shrimp. Lemongrass is commonly used in Asian cuisine for its citrusy aroma and unique taste.

To make buttered shrimp with lemongrass, you start by sautéing minced lemongrass in melted butter until fragrant. This helps infuse the butter with the refreshing flavors of lemongrass. Then, add the shrimp to the pan and cook until they turn pink and are cooked through. The buttery sauce coats the shrimp, making them juicy and flavorful.

This dish is best served hot, garnished with freshly chopped cilantro or spring onions for added freshness. The combination of the butter, lemongrass, and shrimp creates a harmonious blend of flavors that is both comforting and satisfying.

It can be enjoyed as an appetizer, served alongside steamed rice or noodles, or as part of a main course. The tangy and zesty flavor of lemongrass adds a unique twist to traditional buttered shrimp, making it a delightful dish to impress your family and friends with.

Whether you're a seafood lover or simply looking to explore new flavors, buttered shrimp with lemongrass is a delicious option that brings together the best of both worlds.

To cook buttered shrimp with lemongrass, here's a simple recipe for you to try:

Ingredients:

- 1 pound of shrimp, peeled and deveined
- 2 stalks of lemongrass, minced
- 4 tablespoons of butter
- 3 cloves of garlic, minced
- 1 tablespoon of fish sauce
- Juice of 1 lemon or lime
- Salt and pepper to taste
- Fresh cilantro or spring onions for garnish (optional)

Instructions:

2. Mince the lemongrass stalks finely. You can remove the tougher outer layers before mincing if desired.

3. In a large skillet or frying pan, melt the butter over medium heat. Once the butter has melted, add the minced lemongrass and minced garlic. Sauté for about 1-2 minutes until fragrant, being careful not to burn the garlic.

4. Add the shrimp to the pan and stir to coat them well in the butter, lemongrass, and garlic mixture. Cook for around 4-6 minutes, or until the shrimp turn pink and are fully cooked through. Stir occasionally to ensure even cooking.

5. Season the shrimp with fish sauce, salt, and pepper according to your taste preferences. You can adjust the seasoning as needed.

6. Squeeze the juice of one lemon or lime over the shrimp, giving it a tangy and citrusy flavor. Toss the shrimp gently to evenly distribute the lemon or lime juice.

7. Once the shrimp are cooked and coated in the flavorful butter sauce, remove the pan from heat.

8. You can garnish the buttered shrimp with freshly chopped cilantro or spring onions for added freshness and visual appeal.

Chicken Adobo

Adobong manok sa gata at bawang

Chicken Adobo in Gata and Bawang is a Filipino dish that combines the classic flavors of adobo with the creamy richness of coconut milk and the aromatic goodness of garlic. Adobo is a popular Filipino cooking method that involves marinating meat in a mixture of vinegar, soy sauce, garlic, and spices before stewing it until tender.

In this variation, chicken is first marinated in a mixture of vinegar, soy sauce, garlic, and seasonings. Then, it is cooked with coconut milk (gata) and additional garlic (bawang), giving it a unique and flavorful twist. The coconut milk adds a creamy and slightly sweet taste to the dish, complementing the savory flavors of the adobo.

Cooking Chicken Adobo in Gata and Bawang is relatively simple. After marinating the chicken, it is simmered with the marinade, coconut milk, and garlic until the chicken becomes tender and infused with the flavors of the sauce. The result is a deliciously rich and comforting dish with a perfect balance of tanginess from the vinegar, saltiness from the soy sauce, creaminess from the coconut milk, and a hint of garlic in every bite.

This dish is often served with steamed rice, allowing you to savor the flavorful sauce as it combines with the rice. The combination of tender chicken, creamy coconut milk, and aromatic garlic makes Chicken Adobo in Gata and Bawang a delightful and satisfying meal that is enjoyed by many Filipinos and food enthusiasts worldwide.

Feel free to experiment with the recipe by adding your favorite vegetables, such as green beans or bell peppers, to enhance the dish's colors and textures.

- 1/4 cup soy sauce
- 6 cloves garlic, minced (bawang)
- 1 teaspoon whole peppercorns

To make Sinigang na Salmon Belly, the traditional sinigang soup base is used, which usually consists of a souring agent, such as tamarind or kamias, combined with various vegetables and meat. The result is a tangy and comforting broth that perfectly complements the succulent salmon belly.

The salmon belly is typically added towards the end of the cooking process to prevent overcooking and preserve its delicate texture. The belly's fatty nature contributes to the overall flavor, making each bite deliciously satisfying.

As with other sinigang variations, Sinigang na Salmon Belly can be customized according to personal preference. Assorted vegetables like kangkong (water spinach), sitaw (long beans), okra, eggplant, and radish are commonly included to provide a vibrant medley of flavors and textures.

Sinigang na Salmon Belly is not only a delicious dish but also offers several health benefits. Salmon is an excellent source of protein, omega-3 fatty acids, and essential vitamins and minerals. Additionally, the combination of vegetables in the soup provides fiber and vital nutrients.

Whether enjoyed on a rainy day or as a hearty meal, Sinigang na Salmon Belly offers a delightful and nutritious dining experience. It showcases the versatility of Filipino cuisine and highlights the flavors of both the sea and the land.

- 500 grams of salmon belly, cut into serving pieces
- 1 tablespoon cooking oil
- 1 medium-sized onion, sliced
- 2 cloves of garlic, minced
- 2 tomatoes, quartered
- 8 cups of water

- Assorted vegetables of your choice (kangkong, sitaw, okra, eggplant, radish, etc.)

It is often enjoyed as a communal dish, bringing family and friends together around a steaming pot of soup. Cooking Pork Sinigang is relatively straightforward, and here's a simplified version of the recipe:

Ingredients:
- 500g pork ribs or pork belly, cut into serving pieces
- 1 medium-sized onion, sliced
- 2 tomatoes, quartered
- 2 tablespoons fish sauce (patis)
- 1 liter water
- 1 small packet (about 40g) tamarind soup base mix or 2-3 pieces of fresh tamarind, boiled and strained for the broth
- Assorted vegetables (e.g., kangkong/water spinach, radish, eggplant, okra, long green chili peppers), cleaned and trimmed
- Salt and pepper to taste

Instructions:
1. In a large pot, add the water and bring it to a boil. Once boiling, add the pork ribs or pork belly. Let it cook for around 5 minutes or until the scum rises to the surface. Skim off the scum using a slotted spoon or ladle.
2. Add the onions and tomatoes to the pot. Cover and simmer over medium heat for about 30 minutes or until the pork becomes tender.
3. If you're using tamarind soup base mix, dissolve it in a cup of water, then add it to the pot. Alternatively, if using fresh tamarind, strain the boiled tamarind juice into the pot and discard any solids.
4. Season the soup with fish sauce (patis) and adjust the seasoning with salt and pepper according to your taste preference.
5. Add the vegetables starting with the ones that take longer to cook, such as radish and eggplant. Let it simmer for about 5-7 minutes.

Pork 🥩 Steak | Bistek Tagalog

Pinoy Pork Steak, also known as "Bistek Tagalog," is a classic Filipino dish that combines the flavors of savory and tangy in one delicious meal. It's a simple yet flavorful recipe that showcases the unique taste of Filipino cuisine.

Traditionally, Pinoy Pork Steak is made using pork shoulder or pork belly sliced into thin pieces. The meat is marinated in a mixture of soy sauce, calamansi juice (or lemon juice), garlic, and pepper, infusing it with rich flavors. The marinade gives the pork a tangy and slightly salty taste, which is then balanced by cooking it with onions.

To cook Pinoy Pork Steak, the marinated pork is seared in a hot pan until browned on both sides. Sliced onions are then added along with the marinade to simmer until the pork is tender and the flavors blend together. The dish is usually served with steamed rice, and the sauce from the pan is drizzled over the meat for added flavor.

Pinoy Pork Steak is a popular choice for family gatherings and special occasions. It’s loved for its simplicity, affordability, and delicious taste. Some variations may include adding vegetables like bell peppers and carrots to enhance the dish with additional colors and textures.

Whether you're a fan of Filipino cuisine or looking to try something new, Pinoy Pork Steak is definitely worth a try. It's robust flavors and tender pork make it a delightful and satisfying meal that both locals and foreigners enjoy.

How to cook Pinoy Pork Steak, also known as "Bistek Tagalog?

Preparing Pinoy Pork Steak, or Bistek Tagalog, is a straightforward process. Here's a step-by-step guide:

Ingredients:
- 1 pound of pork shoulder or pork belly, sliced into thin pieces
- 1/4 cup soy sauce
- 1/4 cup calamansi juice (or lemon juice if calamansi is not available)
- 4 cloves of garlic, minced
- 1 onion, thinly sliced
- Ground black pepper, to taste
- Cooking oil, for searing

Instructions:
1. In a bowl, combine the soy sauce, calamansi juice (or lemon juice), minced garlic, and ground black pepper. Mix them well to create the marinade.

2. Place the pork slices in the marinade, ensuring that each piece is coated evenly. Let it marinate for at least 30 minutes to an hour. For deeper flavors, you can marinate it for a longer period, even overnight in the refrigerator.

3. Heat a pan over medium-high heat and add some cooking oil. Once the oil is hot, carefully sear the marinated pork slices until they turn brown and develop a caramelized crust. Do this in batches to avoid overcrowding the pan, which may prevent proper browning. Set aside the seared pork slices.

4. In the same pan, sauté the sliced onions until they become translucent and slightly caramelized. You can use the same oil used for searing the pork, but you may add more oil if needed.

5. Pour the remaining marinade into the pan with the onions. Bring it to a simmer and let it cook for a few minutes to reduce the liquid and intensify the flavors.

6. Add the seared pork slices back into the pan, making sure to coat them with the sauce. Allow them to simmer in the sauce for about 10-15 minutes, or until the pork is tender and fully cooked.

7. Taste the sauce and adjust the seasoning according to your preference. You can add more soy sauce or calamansi juice if desired.

8. Once the pork is tender and the flavors have melded together, remove the pan from heat. You can choose to serve the Pinoy Pork Steak as it is or add some garnishments like chopped green onions or fried garlic for extra flavor and presentation.

9. Serve the Pinoy Pork Steak hot with steamed rice. You can drizzle some of the sauce from the pan over the pork slices and rice for added flavor.

- 2 tablespoons of cooking oil
- 1 onion, chopped
- 4 cloves of garlic, minced
- 3 tablespoons of annatto (achuete) seeds
- 1 cup of peanut butter
- 4 cups of water or beef broth
- 1 eggplant, cut into thick slices
- 1 bundle of bok choy or pechay, ends trimmed
- 1 cup of string beans, cut into 2-inch pieces
- Salt and pepper to taste
- Bagoong (shrimp paste) for serving
- Optional: 1 banana blossom, sliced

Instructions:
1. In a large pot, heat the cooking oil over medium heat. Sauté the onions and garlic until fragrant and translucent.

2. Add the beef (or oxtail) to the pot and cook until browned. Stir occasionally to ensure even cooking.

3. Dissolve the annatto seeds in a little bit of water, then pour the mixture into the pot. This will give the dish its characteristic orange color.

4. Add the water or beef broth to the pot and bring it to a boil. Reduce the heat to low, cover, and let it simmer until the meat is tender. This may take around 1-2 hours, depending on the meat used.

5. Once the meat is tender, add the peanut butter to the pot. Stir well to combine and let it simmer for another 10 minutes.

6. Add the eggplant, bok choy (or pechay), string beans, and optional banana blossom. Simmer until the vegetables are cooked but still slightly crisp.

7. Season with salt and pepper to taste. Adjust the peanut butter or water/broth as needed to achieve your desired consistency and flavor.

8. Serve the Kare-Kare hot with steamed rice and a side of bagoong (shrimp paste).

Its robust flavors and tender pork make it a delightful and satisfying meal that both locals and foreigners enjoy.
