Ingredients:
- 500g bone-in chicken pieces (legs or thighs)

- 1 thumb-sized piece of ginger, grated
- 2 medium-sized potatoes, peeled and cubed
- 1 carrot, peeled and sliced
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 cup coconut milk
- 1 cup chicken broth
- 2 tablespoons curry powder
- 1 tablespoon fish sauce (optional, for added umami flavor)
- 2 tablespoons cooking oil

1. Heat the cooking oil in a large pot or deep pan over medium heat.
